Shopping locally for fresh ingredients and preparing the best of the season: an admirable pursuit. So, how do you prepare a great meal when the only seasonal, local items available are broccoli, onions and apples?

Shop the local marché with Chef Philippe and learn how he makes his menu decisions in real time as he selects the best available. Learn delectable combinations you may not have considered and the simple rules you can use to create your own great winter cuisine. Learn about indoor and outdoor winter herb gardens, best dry and fresh herbs and tips that chefs use for great flavor while Mother nature sleeps.

For this guys-only event, "What happens at Chez Ducrot stays at Chez Ducrot". Not even Linda is allowed to attend this one! Hang out, cook and eat, and learn some "French secrets". Six guys in a kitchen - no more.

Due to liquor license limitations, we are not allowed to serve alcohol at this event. But you are welcome to bring your own beverage of choice.

If the guys can do it, so can we! Six women and a Frenchman in the kitchen (and we ain't talkin'). Cook, eat, giggle. We'll create our own French secrets.

Saturday, January 31, 2009 - Kitchen Magic - working with lesser cuts of beef/fish to create great dishes and flavors.
Shopping smart is important: things are tight right now. This session will show you: how to shop smart and work with lesser cuts to create great flavors; how to save by buying bulk and butchering, how to use every part; a review of knife and butchering techniques, how to filet, and you will learn three great recipes for enhancing lesser cuts. Each participant will learn hands-on, eat and receive recipes.
